Fat in the diet was first demonised in the 1970s leading to NHS ‘anti-fat guidelines’ in the 1980s. Fats are now being rehabilitated in the light of on-going research studies demonstrating that far from being detrimental to health, fats can actually promote it. There is much confusion surrounding fats in the diet, ranging from saturated fats to the Omega 3s essential fatty acids, as well as over the role of cholesterol and triglycerides in the promotion of heart disease. Much of the received wisdom of the past 40 years is based upon what has since been shown to be flawed evidence. Elodie’s talk will explain which fats matter and why and how concerned you need to be about raised cholesterol. You may be surprised by what you hear.
